You open the fridge, look at what's inside, close it… and a few minutes later you open it again, hoping an idea will strike. If this sounds familiar, this post is for you.

After work, errands, and completing the day's tasks, deciding what to have for dinner can become another chore. That's why, at Trocadero Park, we're suggesting three simple dinners to add variety to your week.

Note down the ingredients you're missing and prepare your next purchase at Cash Fresh Trocadero Park.

1. Chicken, cheese and vegetable quesadillas

This dinner is easy to adapt to whatever you have in the fridge. Plus, it's a great way to use up leftover chicken from another meal.

What do you need?

  • Wheat or corn tortillas.

  • Cooked and shredded chicken.

  • Grated cheese.

  • Pepper, onion, or any vegetables you prefer.

Here's how to prepare them: Sauté the thinly sliced vegetables and mix them with the chicken. Spread the filling onto half a tortilla, add the cheese, and fold it over. Heat it in a pan on both sides until golden brown and the cheese is melted. Cut it into triangles and serve with a tomato salad. Dinner's ready!

2. Pumpkin cream with egg toast

With the arrival of autumn, a warm soup is especially appealing. You can prepare it in advance and leave the toast that accompanies it until the last minute.

What do you need?

  • Pumpkin.

  • Carrot.

  • Onion.

  • Water or broth.

  • Bread.

  • Eggs.

  • Olive oil, salt, and your favorite spices.

Here's how to prepare it: gently sauté the onion in a little oil, add the chopped pumpkin and carrot, and cover with water or broth. Cook until tender, then purée, adjusting the amount of liquid to your liking. Serve it with a slice of scrambled egg on toast. A touch of pepper or paprika can give it the perfect finishing touch.

A little trick: prepare more cream than you need that night and save another portion for the next day.

3. Mushroom and cheese toast

For those nights when you fancy something warm, but want to use few ingredients and make as little mess as possible.

What do you need?

  • Slices of bread.

  • Mushrooms.

  • Garlic.

  • Cheese for melting.

  • Olive oil.

  • Parsley or pepper, if you like.

Here's how to prepare it: Sauté the chopped garlic with the sliced mushrooms until cooked and any excess water has evaporated. Spread them on lightly toasted bread, add the cheese, and broil until melted. You can serve the toasts with dressed tomatoes and adjust the portion sizes to suit your appetite.

The best ingredient: having some ideas prepared.

You don't need to plan a perfect menu for the whole week. Sometimes it's enough to choose two or three dinners before you go shopping to avoid running out of inspiration at the end of the day.

First, check the refrigerator and pantry, note what's missing, and look for ingredients you can use in more than one recipe. The vegetables from the quesadillas, for example, can also be used in a scramble another day.

Tonight, replace "I don't know" with "What a great idea!"

Crispy, warm, or with freshly melted cheese… Which of these dinners would you choose?
